Grilled Peaches with Yogurt and Pistachios Recipe

A perfect ‘sweet treat’ for the health conscious!

This recipe serves 4

4 large ripe peaches, pitted and halved
1 tbsp coconut oil
½ cup plain greek yogurt
2 tbsp honey
2 tbsp fresh basil, cut into thin strips
1 tbsp orange zest (optional)
¼ cup dry roasted unsalted pistachios, shells removed

Preheat grill to medium-high heat. Grease grill with 1 tbsp coconut oil and add peaches. Cook for 4-6 minutes turning once halfway or until tender with nice grill marks. Transfer to a plate to cool. In a small bowl, mix yogurt, honey, basil, and orange zest. Arrange 2 peach halves on each plate, spoon yogurt mixture over top, and sprinkle with pistachios.
